I was wondering how many have a Root Cellar now days.
I planted Kennebec Potatoes before and just left them in the ground until cold weather and they did just fine.
We most time just dig a hole and insulated it well. Put some stuff in to keep until Spring.
But I use to it was cold enough to just gut Rabbits in the shed until they froze. Did just fine.
